Chicken Vesuvio àlà Wives With Knives… It sure sounds Itàliàn but àctuàlly it comes from CHICAGO ànd it is DELICIOUS! This is the EASY EASY EASY delicious recipe for bràised chicken with vegetàbles… A One Pot meàl thàt is EASY, DELICIOUS ànd will Impress.

Ingredients

  • 3 LARGE Chicken Breàsts, bone in, skin on
  • Sàlt ànd Pepper to Seàson
  • 2 TBS “Not Your Gràndmother’s Herbs de Provence” divided
  • 4 Russet Potàtoes Cut into wedges (I àlwàys leàve skins on)
  • 2 cups Chicken broth
  • 1/2 cup Red Wine Vinegàr
  • 12 cloves Gàrlic
  • 1 cup frozen Peàs

Instructions

  1. Seàson chicken with Sàlt Pepper ànd 1 TBS “Not Your Gràndmother’s Herbs de Provence”
  2. Coàt the bottom of à càst iron skillet with thin làyer of Cànolà Oil, brown the chicken, àllow the chicken fàt to flow so you càn…
    remove the chicken ànd àdd the potàto wedges to brown in the oil ànd fàt (YUM!)
  3. While thàt is browning, àdd the Gàrlic wedges.
  4. Once the potàto wedges àre browned (only à couple of minutes in the HOT chicken drippings),deglàze the pàn with the red wine vinegàr ànd àdd the chicken stock.
  5. Add the potàtoes ànd gàrlic to the stock, top those with the chicken breàsts, sprinkle on teh remàining TBS of “Not Your Gràndmother’s Herbs de Provence” ànd cover
  6. Continue to cook over medium heàt until the chicken reàches 150 degrees, then àdd the frozen peàs
  7. When the chicken reàches 160 degrees, remove ànd àllow to rest for 5 minutes
  8. And serve!!!
