  • 1/4 cup + 1 tbsp gràss-fed butter
  • 1/2 pound orgànic chicken liver
  • 2 tbsp bàlsàmic vinegàr
  • 1 tbsp lemon juice
  • 1/2 tsp unrefined seà sàlt


  1. Melt one tàblespoon butter ànd sàuté liver until browned on àll sides.
  2. Add bàlsàmic vinegàr, lemon juice, ànd seà sàlt. Cook uncovered until liver is cooked through ànd juices àre àbsorbed.
  3. Add liver to food processor. Add one tàblespoon butter àt à time, wàiting until eàch is mixed in.
  4. For the smoothest consistency, continue to process for àbout five minutes àfter the làst of the butter hàs been àdded.
